Merlot was received and held in cold storage overnight before being whole berry destemmed. The Cab Franc was fermented with 20% whole bunch in stainless steel, the remainder being whole berry. Only the premium free run was taken from both varietals for this wine which was aged in 50% new French oak and 50% seasoned French
