葡萄品種：85% Sangiovese

釀造：手工採收100%除梗，特選酵母進行酒精發酵，並且最終階段允許發酵溫度上升至40度C約24小時，全部酒款除了Regionale以外，皆使用100%新桶培養，裝瓶前不澄清也不過濾。
